Perello Guindilla Chilli Peppers
Guindilla peppers are the perfect tapas pepper, making an ideal bar snack (called Pincho or Pinxto in the Basque region) where a particular type of “banderillas” or hors d’ouevre of pickled gherkins, anchovies and guindillas are skewered on a cocktail stick. With something so simple, it goes without saying, the quality of the ingredients used will make all the difference to the taste.
If you find making skewers a little fiddly, simply place the peppers on a platter with other olives, pickled figs, cornichons and a selection of cheese to make the perfect accompaniment to drinks.
